Dissolve yeast in warm water and coffee. Blend flours together. Add 4 cups of flour and whip for 10 minutes. Add salt. Add remaining flour. Knead dough until smooth and elastic. Place on flat surface and cover with a large bowl.
Allow to rise until doubled in size. Punch down and allow to rise second time. Punch down and form into 2 or 3 loaves. Place on dusted baking sheets. Bake at 450 degrees about 25 minutes or until the crust is golden and the loaf sounds hollow when thumped on the bottom.
